There are many different recipes but this Jamaican curry chicken recipes adds garam masala for a robust flavor. Garam masala can be bought at local supermarkets like Lee’s Food Fair and Loshusan in Jamaica. If you are overseas, you can purchase Indian curry or Jamaican curry at any Indian grocery or ordered online at Amazon.
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Servings: 3-4 persons
2 1/2 lbs boneless chicken skinned and chopped into 2″ pieces
4 tablespoons Jamaican curry powder (any good curry powder or paste)
2 teaspoons garam masala (optional)
1 teaspoon turmeric
12 pimento berries (ground or crushed finely)
1 small onion- sliced
1 stalk green onion-diced
1 sprig thyme
2 small cloves garlic- finely diced
1/2 teaspoon scotch bonnet pepper/habanero
1 to 1 1/2 cups water
Salt to taste (some curries have added salt)
2 tablespoons light flavored cooking oil
Rinse chicken, drain and add the curry, turmeric, onion, garlic, green onion, thyme and scotch bonnet. Combine the ingredients well with the chicken and cover in the fridge for at least 30 minutes (the longer you marinade, the better the flavor).
Seasoning Jamaican Curry Chicken
Heat oil in skillet over medium heat, and then add chicken. By lightly browning the chicken, you seal in the curry flavor. Take care not to burn the chicken.
Cooking Jamaican Curry Chicken
Once chicken is browned, add the water. Cover pot, reduce heat and simmer for approximately 15 to 18 minutes.
Serve hot with your favorite carbohydrate or vegetable.

Cook Tips: Add 1/4 cup of coconut milk to the pot 10 minutes before completing the dish. This coconut milk gives the chicken a rich and creamy taste.
